PASTA CLASSES

Please join Chef Steve Samson in this fun, interactive, hands-on class to learn how to roll pasta al mattarello (with a rolling pin). By the end of this session, you will take the following away:

  1. How to make fresh egg pasta dough by hand (no machine!)

  2. How to roll pasta ‘al mattarello’

  3. How to make cut pasta

  4. How to fill and fold pasta

  5. How to cook pasta

To keep the class more intimate, there will be a minimum of 6 attendees and a maximum of 10 attendees.

Class starts at 10am at feed feed located right next door to Rossoblu.

Please feel free to park in the parking lot across the street from the building. Street parking is also available. The entrance is located on 11th Street between San Pedro St. & San Julian St. Please let the parking attendants know you are coming for Rossoblu's Pasta Class.

rossoblu WINE CLUB

The Wine Club box includes three wines from Piedmont and a fourth from the Italian Dolomite Alps: a white, two reds, and a sweet sparkling white.

Piedmont isn’t known for its white wines and so we headed across the Alps to the east to the Adige River Valley where the native white grape Nosiola makes for wines with ripe stone fruit and a distinctive nuttiness — ideal for the holidays!

The first red is Dolcetto, one of the quintessential food wines of Piedmont, known for its bright cherry fruit flavors and lithe texture.

Next comes a Nebbiolo, arguably the finest of Piedmont grapes, the same variety used to make Barolo and Barbaresco. The only difference is that the vines are younger and the maceration times are shorter during fermentation, making for earthy red wine that is ready to drink in its youth.

Lastly, everyone needs something sparkling and sweet for the Holidays. Moscato d’Asti hits the spot with gentle sweetness and delicate bubbles, a wine you can serve as an aperitif or after dinner with dessert. And for those who like sweet wines, they might want to just stick to the Moscato! It’s one of those wines that everyone loves.

And for those who want to serve top Nebbiolo at their Holiday feast, we sourced a Barbaresco and a Barolo — both made from 100 percent Nebbiolo.

These are among Italy’s greatest wines. The first comes from a single farm managed by the Bianco family. Although not technically a “cru,” locally this wine is considered a single-vineyard wine.

The second is from one of our all-time favorite Piedmont growers, Vajra. The single-vineyard, cru-designate Barolo Costa di Rose is one of the most spectacular wines we tasted this year. And it has many years ahead of it should you decide to cellar it.
