LASAGNA BOLOGNESE: ULTIMATE COMFORT FOOD

Lasagna Bolognese is THE dish that comforts us most during the holiday season. Our ragu is cooked for eight hours and our fresh egg pasta is hand rolled. We use bechamel (not mozzarella or ricotta). and 24-month aged Parmigiano Reggiano to tie everything together. This is not an easy process, which is why it feels especially meaningful when on our holiday menu.

Our family still serves lasagna bolognese with every Christmas dinner. As such. it lovingly honors the memory of Chef Steve's mom and nonna, who passed along this cherished holiday tradition.

For Supper Club, we’ve included it as a tasting-size portion, enough to share the tradition and give you a sense of the care and time behind it. We hope it brings a sense of warmth to your table, and a feeling of being welcomed to ours.

FUN FACT: Lasagna alla Bolognese is rarely eaten in restaurants in Italy, save for Sundays and holidays. It’s considered to be best enjoyed at home with family and loved ones.

ROSSOBLU SUPPER CLUB PLAYLIST DEC 2025

This month’s playlist is compliments of one of my favorite brunch spots in Milan, Lubar. They have done such a great job of creating a beautiful, well-curated space complete with food, design, music, and art.
